Brewing method:
- Prepare the tea set: Select transparent glass tea set or white porcelain covered bowl to observe the appearance and color of the tea leaves. Also, prepare a fair – cup, tasting cups, etc.
- Tea quantity: According to personal taste and the capacity of the tea set, generally put 3 – 5 grams of tea for every 150 milliliters of water. If you like a strong taste, you can appropriately increase the amount of tea.
- Water temperature: Yunnan Dianhong is suitable to be brewed with hot water at 85 – 95℃. If the water temperature is too high, it is easy to scald the tea leaves and make the tea soup bitter; if the water temperature is too low, it cannot fully stimulate the aroma and taste of the tea leaves.
- Rinse the tea: Pour an appropriate amount of hot water into the tea set and quickly rinse the tea leaves for about 5 – 10 seconds. The purpose of rinsing the tea is to remove the impurities on the surface of the tea leaves and wake up the tea leaves.
- Brewing: Slowly pour hot water along the edge of the tea set to let the tea leaves fully unfold. After pouring water, wait for 3 – 5 minutes to let the tea leaves fully release their aroma and taste.
- Pour out the tea soup: Pour the brewed tea soup into the fair – cup, and then divide it into the tasting cups. When pouring out the tea soup, try to drain it completely to avoid the tea leaves being soaked in water for a long time, which will make the tea soup too strong.
- Taste the tea: First, smell the tea aroma and feel the unique sweet and floral – fruity aroma of Dianhong. Then take a small sip of the tea soup to feel its mellow taste and sweet flavor.
